Yeah, I get it. More time in the oven makes for a better developed bun. The Mayo Clinic has a nice page that describes the stuff that is still happening with fetal development even late into the 39th week. Stuff like antibody development and fat deposits that help regulate body temperature, which is nice.
Then again, the same page says that "It's just as normal to deliver a baby a week or two late — or early — than it is to deliver right on time." Good news for Beth at the cusp of the North Carolina Indian summer.
